Season chicken breasts with salt and pepper on both sides.
Heat olive oil in a skillet over medium-high heat and cook chicken for 5-6 minutes on each side until golden and crispy.
Remove chicken from skillet and let it rest on a plate.
Lower heat, add minced garlic to skillet and sauté for 30 seconds. Pour in cream while stirring continuously.
Stir in Italian seasoning or oregano and grated parmesan cheese until well combined.
If using, add spinach to the sauce and stir gently until wilted for 2-3 minutes.
Return chicken to the pan and spoon sauce over it. Let simmer for 1 minute before removing from heat.
