  • 10 mini pumpkins
  • 1 lb ground beef (or turkey/chicken)
  • 1 can (15 oz) pumpkin puree
  • 1 large yellow onion, diced
  • 2 garlic cloves, minced
  • 6 tbsp olive oil
  • 2 tsp salt
  • 1/2 tsp ground black pepper
  • 1 tsp pumpkin pie spice
  • 1/2 tbsp fresh thyme
  • 1/2 tbsp fresh oregano
  • 1/2 tbsp fresh sage, chopped

Instructions

  1. Preheat oven to 400°F (200°C).
  2. Prepare mini pumpkins by rinsing, cutting off tops, and scooping out seeds.
  3. Sauté onion and garlic in olive oil until fragrant.
  4. In a bowl, mix ground beef, pumpkin puree, sautéed onion and garlic, spices, and herbs.
