  • 2 pounds boneless skinless chicken breasts
  • 1 red bell pepper
  • ½ medium yellow onion
  • 2 (13.5-ounce) cans quartered artichoke hearts
  • 2 cups baby spinach
  • ½ cup mayonnaise
  • 4 garlic cloves
  • 1 lemon
  • 1 teaspoon dried oregano
  • 1 teaspoon dried thyme
  • 1 teaspoon kosher salt
  • ½ teaspoon freshly ground black pepper

Instructions

  1. Preheat your oven to 400°F (200°C). Cut the chicken into bite-sized pieces.
  2. In a large mixing bowl, combine the chicken, diced red bell pepper, chopped onion, drained artichokes, spinach, and optional parmesan.
  3. In a separate bowl, mix mayonnaise, minced garlic, lemon zest and juice, oregano, thyme, salt, and pepper.
  4. Pour the dressing over the chicken mixture and stir until combined.
  5. Transfer to a greased baking pan and bake uncovered for 25 to 30 minutes until fully cooked.
