  • 3 pounds boneless chuck roast
  • 1 tablespoon cooking oil
  • Juice of 1 lime
  • ½ teaspoon smoked paprika
  • 1 yellow onion, diced
  • 4 cloves garlic, minced
  • 2 teaspoons ground cumin
  • 2 teaspoons chili powder
  • 1 teaspoon cayenne pepper
  • 1 cup beef broth
  • 3 tablespoons tomato paste
  • Salt and pepper to taste

Instructions

  1. Mix seasoning ingredients in a bowl.
  2. Pat the chuck roast dry; rub seasoning mixture over it.
  3. Heat oil in a skillet and sear the beef until golden brown on all sides.
  4. Transfer seared beef to slow cooker; add onions, garlic, beef broth, and tomato paste.
  5. Cover and cook on low for 6 to 8 hours or high for 3 to 4 hours.
  6. Shred beef with forks once cooked; mix back into sauce and add lime juice before serving.
