  • 3 1/24 cups all-purpose flour
  • 1 packet (2 1/4 teaspoons) instant yeast
  • 1 teaspoon salt
  • 3/4 cup warm milk
  • 3 tablespoons honey
  • 6 tablespoons salted butter, at room temperature
  • 3 eggs, at room temperature
  • For topping: egg yolk, flaky sea salt, sage leaves

Instructions

  1. In a stand mixer bowl, combine flour, yeast, and salt. Add warm milk, honey, eggs, and softened butter. Mix until fully incorporated (4-5 minutes). Adjust flour if sticky.
  2. Let the dough rest covered for 15 minutes to an hour.
  3. Prepare sage honey butter by frying sage leaves in butter until crisp. Chop finely and mix with additional butter and honey.
  4. Preheat oven to 350°F (175°C). Roll out dough into squares, brush with sage honey butter, cut into strips, and coil into rolls.
  5. Place rolls seam-side down in a prepared baking dish. Brush with egg yolk mixture and let rise for 30 minutes until puffy.
  6. Bake for 22-25 minutes until golden brown. Brush with remaining sage honey butter while warm.
