  • 1 whole chicken (45 pounds)
  • 2 tablespoons olive oil
  • 1 tablespoon minced garlic
  • 1 tablespoon chopped fresh thyme
  • 1 tablespoon chopped fresh rosemary
  • Zest and juice of 2 large oranges
  • 1 tablespoon honey
  • 1 tablespoon soy sauce
  • 1 teaspoon Dijon mustard
  • Salt and pepper to taste
  • 1 small onion, quartered
  • 1 cup chicken broth

Instructions

  1. In a bowl, whisk together olive oil, garlic, thyme, rosemary, orange zest and juice, honey, soy sauce, Dijon mustard, salt, and pepper.
  2. Place the chicken in a resealable bag or dish and pour the marinade over it. Ensure it’s well coated and refrigerate for at least 30 minutes (or overnight for best results).
  3. Preheat your oven to 375°F (190°C).
  4. Stuff the quartered onion into the cavity of the chicken and place it in a roasting pan with broth poured around it.
  5. Roast for about 1 hour and 15 minutes or until the internal temperature reaches 165°F (75°C) and the skin is golden brown.
  6. Let the chicken rest for 10 minutes before carving and serving.
