  • 1 tsp olive oil
  • 2 pounds red potatoes (washed and quartered)

Instructions

  1. Preheat your oven to 375°F. Cut off the top of the garlic head and drizzle with olive oil. Wrap it in foil and roast for about an hour until soft.
  2. In a large pot, cover quartered red potatoes with cold water and add salt. Bring to a boil and simmer until fork-tender, approximately 15 minutes.
  3. Drain the potatoes and return them to the pot with roasted garlic cloves.
