  • 1/3 cup crushed pistachios
  • 3 tablespoons honey (plus more for drizzling)
  • 1/2 teaspoon vanilla extract
  • Pinch of salt
  • 1/3 cup all-purpose flour
  • 1 egg (beaten)
  • 1/2 cup Panko breadcrumbs
  • Neutral oil for frying

Instructions

  1. In a medium bowl, combine ricotta cheese, crushed pistachios, honey, vanilla extract, and salt until well mixed.
  2. Chill the mixture in the refrigerator for 15-20 minutes to firm up.
  3. Shape into approximately 14 small balls.
  4. Set up three shallow dishes with flour, beaten egg, and Panko breadcrumbs.
  5. Coat each ball in flour, dip in egg, and then roll in breadcrumbs.
  6. Heat neutral oil in a skillet over medium heat until it reaches around 350°F (175°C).
  7. Fry the balls in batches for about 2-3 minutes until golden brown.
  8. Drain on paper towels and drizzle more honey before serving.
