  • 1/2 cup unsalted butter (melted)
  • 24 oz cream cheese (softened)
  • 3/4 cup granulated sugar
  • 3 large eggs
  • 1 cup canned pumpkin puree
  • 1 teaspoon vanilla extract
  • 1 tablespoon pumpkin pie spice

Instructions

  1. Preheat your oven to 325°F (163°C). In a bowl, mix graham cracker crumbs, sugar, and melted butter until combined. Press firmly into the bottom of a greased 9×13-inch baking dish.
  2. In another bowl, beat cream cheese until smooth. Gradually add sugar, mixing well. Incorporate eggs one at a time. Stir in pumpkin puree, vanilla extract, pumpkin pie spice, and optional flour until smooth.
  3. Pour filling over the crust and bake for about 40 minutes or until the center is slightly jiggly. Allow cooling before chilling in the refrigerator for at least four hours.
  4. Cut into squares and serve topped with whipped cream, caramel sauce, nuts, and a sprinkle of cinnamon or nutmeg.
