  • 1 cup orzo pasta
  • 2 cups low-sodium chicken broth
  • ½ cup basil pesto
  • 1 pint cherry tomatoes, halved
  • ½ medium red onion, thinly sliced
  • 3 cloves garlic, minced
  • 2 tablespoons olive oil
  • Juice of 1 lemon
  • ¼ cup grated Parmesan cheese
  • Fresh basil for garnish (optional)
  • Salt and black pepper to taste

Instructions

  1. Prepare all ingredients: cut chicken and vegetables, mince garlic, and measure out liquids.
  2. Heat olive oil in a large skillet over medium-high heat. Sauté red onion until softened (about 3 minutes), then add minced garlic and optional red pepper flakes.
