  • 1 cup cold butter
  • 5 large eggs
  • 1 cup dark corn syrup
  • ⅔ cup granulated sugar
  • 1 teaspoon vanilla extract
  • ⅛ teaspoon salt
  • 2 cups chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Lightly spray two 12-cup muffin tins with non-stick cooking spray.
  3. In a bowl, combine the flour and brown sugar. Cut in cold butter until the mixture resembles coarse crumbs.
  4. Press the crust mixture into each muffin cup, ensuring even coverage.
  5. In another bowl, whisk together eggs, dark corn syrup, granulated sugar, vanilla extract, and salt until smooth. Stir in chopped pecans.
  6. Pour the filling into each crust until about three-quarters full.
  7. Bake in the preheated oven for approximately 40 minutes or until golden brown around the edges.
  8. Allow to cool slightly before carefully removing from the tins.
