  • 2 cups cooked grains (brown rice, quinoa, or cauliflower rice)
  • 1 cup roasted chickpeas (optional)
  • 1 cup cherry tomatoes (halved)
  • 1 cucumber (diced)
  • ½ red onion (thinly sliced)
  • ½ cup kalamata olives (pitted)
  • ⅓ cup feta cheese (crumbled; optional)
  • ¼ cup fresh herbs (parsley or dill, chopped)
  • 1 cup Greek yogurt or coconut yogurt
  • ½ cucumber (grated, squeezed dry)
  • 1 tbsp fresh dill (chopped)
  • 3 tbsp olive oil (for vinaigrette)
  • 2 tbsp fresh lemon juice (for vinaigrette)
  • 1 tsp honey (optional for vinaigrette)
  • 1 garlic clove (for vinaigrette)
  • ½ tsp dried oregano (for vinaigrette)

Instructions

  1. Marinate the steak by mixing olive oil, minced garlic, lemon juice, oregano, thyme, salt, and pepper in a bowl. Coat the steak well and let it marinate for at least 30 minutes.
  2. Prepare the tzatziki sauce by combining Greek yogurt (or coconut yogurt), grated cucumber, lemon juice, minced garlic, dill, salt, and pepper in a bowl. Chill in the refrigerator.
  3. Whisk together vinaigrette ingredients: olive oil, lemon juice, honey (optional), minced garlic, oregano, salt, and pepper.
  4. Heat a skillet over medium-high heat and sear the marinated steak for 4-5 minutes on each side until cooked to your liking. Let rest before slicing thinly.
