  • 1 tbsp olive oil
  • 1 small onion, finely chopped
  • 3 cloves garlic, minced
  • 1 bell pepper (red or yellow), diced
  • 1 small zucchini, diced
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • ½ tsp dried oregano
  • ¼ tsp red pepper flakes (optional, for heat)
  • ½ cup cherry tomatoes, halved
  • ¼ cup kalamata olives, sliced
  • 2 tbsp fresh parsley, chopped
  • 1 tbsp fresh lemon juice
  • ¼ cup crumbled feta cheese (optional)
  • ¼ cup toasted pine nuts (optional)

Instructions

  1. Heat olive oil in a large skillet over medium heat.
  2. Sauté chopped onion for 2–3 minutes until softened.
  3. Add minced garlic and cook for an additional 30 seconds.
  4. Brown the ground beef in the skillet and season with salt, black pepper, cumin, smoked paprika, oregano, and red pepper flakes.
  5. Stir in diced bell pepper and zucchini; cook until tender yet crisp (about 5 minutes).
  6. Mix in cherry tomatoes and kalamata olives; cook for another 2 minutes.
  7. Remove from heat; stir in fresh parsley and lemon juice.
  8. Serve warm topped with optional feta cheese and toasted pine nuts.
