  • 1.5 lbs white fish fillets (cod, halibut, or tilapia)
  • 2 tablespoons olive oil
  • 1 medium red onion, sliced
  • 3 garlic cloves, minced
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 cup cherry tomatoes, halved
  • 1/3 cup pitted Kalamata olives, halved
  • Juice and zest of 1 lemon
  • 1 teaspoon dried oregano
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 400°F (200°C) and lightly grease a baking dish with olive oil.
  2. In a large bowl, combine red onion, bell peppers, cherry tomatoes, garlic, olives, olive oil, oregano, salt, and pepper. Toss until evenly coated.
  3. Spread the vegetable mixture in the prepared baking dish. Place fish fillets on top and drizzle with lemon juice and zest; season with additional salt and pepper.
  4. Bake uncovered for 20–25 minutes until the fish is opaque and flakes easily with a fork.
  5. Garnish with fresh parsley before serving alongside lemon wedges.
