  • 2 tablespoons olive oil
  • 1 small yellow onion, finely diced
  • 3 garlic cloves, minced
  • 2 ½ cups low-sodium chicken broth (or vegetable broth)
  • Zest of 1 lemon
  • Juice of 1 lemon (about 23 tablespoons)
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • Optional: 2 tablespoons chopped fresh parsley for garnish

Instructions

  1. In a medium saucepan, heat olive oil over medium heat. Sauté onion for 2-3 minutes until soft; add minced garlic and cook for an additional 30 seconds.
  2. Stir in the rice, coating it with the oil and aromatics. Toast for about 1 minute.
  3. Pour in chicken broth, lemon juice, lemon zest, oregano, salt, and pepper. Bring to a boil, then reduce heat to low and cover.
  4. Simmer undisturbed for 18-20 minutes until liquid is absorbed and rice is tender.
  5. Remove from heat and let sit covered for an additional 5 minutes before fluffing with a fork. Adjust seasoning if necessary and garnish with parsley.
