  • 1/2 lb (8oz) pasta (spaghetti, linguine, penne)
  • 1 cup (9oz) whole-milk ricotta
  • 8 oz fresh baby spinach
  • 1/3 cup grated Parmesan cheese
  • 1 unwaxed lemon (zest and juice)
  • 1 Tbsp extra virgin olive oil
  • 1 garlic clove, grated or pressed
  • Salt and black pepper to taste

Instructions

  1. Cook the pasta in boiling salted water according to package instructions until al dente.
  2. In a bowl, combine ricotta, olive oil, Parmesan cheese, garlic, lemon zest and juice; season with salt and pepper.
  3. When there’s one minute left on the pasta cooking time, add fresh spinach to the pot.
  4. Drain the pasta and spinach; return to the pot with the ricotta sauce and some reserved cooking water. Mix until creamy.
  5. Serve hot with extra Parmesan and lemon wedges if desired.
