  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper, to taste
  • 2 cups cooked brown rice or quinoa
  • 1 cup corn kernels (fresh, canned, or frozen)
  • 1 cup black beans, rinsed and drained
  • 1 cup cherry tomatoes, halved
  • 1/2 cup diced red onion
  • 1/2 cup shredded lettuce or baby spinach
  • 1/4 cup light ranch dressing
  • 2 tablespoons BBQ sauce

Instructions

  1. Marinate chicken: Mix olive oil, garlic powder, smoked paprika, salt, and pepper in a small bowl. Coat chicken breasts evenly and let marinate for about 10 minutes.
  2. Cook chicken: Heat a grill pan over medium-high heat. Cook chicken for 6–7 minutes per side until it reaches an internal temperature of 165°F (74°C). Let rest before slicing.
  3. Prepare grains and veggies: Cook grains as per package instructions. Halve tomatoes, dice onion, rinse beans, and prepare corn.
