  • 24 ounces fresh green beans, ends trimmed
  • 4 tablespoons unsalted butter
  • 8 ounces baby bella mushrooms, sliced
  • 1 tablespoon garlic, minced
  • 2 tablespoons all-purpose flour
  • 1 1/2 cups chicken broth
  • 1 tablespoon fresh lemon juice
  • 2 teaspoons Dijon mustard
  • 1 teaspoon dried thyme
  • 1/2 teaspoon red pepper flakes, optional
  • 1/4 teaspoon ground nutmeg
  • Kosher salt and freshly ground black pepper, to taste
  • 1/2 cup heavy whipping cream
  • 1/2 cup freshly grated parmesan, divided
  • 4 medium shallots, halved lengthwise and sliced thinly
  • 1 cup vegetable oil
  • Creole Cajun Seasoning, to taste

Instructions

  1. Heat vegetable oil in a skillet over medium-high heat; add sliced shallots and fry until golden brown and crispy. Remove and drain on paper towels.
  2. Boil salted water in a large pot; add fresh green beans and cook until just tender. Drain and set aside.
  3. In another pan, melt butter over medium heat; sauté mushrooms until browned, then add garlic.
  4. Stir in flour to create a roux, then gradually add chicken broth, stirring until thickened. Mix in lemon juice, Dijon mustard, Worcestershire sauce, thyme, red pepper flakes (if using), nutmeg, salt, pepper, and cream.
  5. Combine cooked green beans with the mushroom sauce in a baking dish; top with half of the fried shallots and grated parmesan. Bake until bubbly.
