  • 1 red bell pepper
  • 1 red onion
  • 1 jalapeno
  • 16 oz frozen corn
  • 4 cups cooked chicken breast
  • 1/2 cup light mayo
  • 1/2 cup plain nonfat Greek yogurt
  • 1 lime (zested and juiced)
  • Fresh cilantro and scallions for garnish

Instructions

  1. Preheat oven to 400°F. Chop bell pepper, onion, and jalapeno; spread on a sheet pan with frozen corn. Spray with olive oil and sprinkle with salt. Roast for 20-25 minutes until tender.
  2. In a bowl, combine light mayo, Greek yogurt, lime zest and juice, cumin, paprika, salt, and chili powder. Whisk until smooth.
  3. Once vegetables cool slightly, chop cooked chicken and mix with roasted veggies in the bowl with dressing. Add chopped cilantro and scallions; toss gently to coat.
  4. Serve chilled or at room temperature, garnished with crumbled cheese if desired.
