  • 6 1/4 cups bread flour
  • 2 teaspoons instant dry yeast
  • 2 cups warm water
  • 1 tablespoon granulated sugar
  • 1/2 cup plus 2 tablespoons extra virgin olive oil
  • 4 teaspoons fine sea salt
  • 7 ounces gruyère cheese (cubed)
  • 2 tablespoons fresh thyme leaves
  • 2 teaspoons Maldon sea salt flakes

Instructions

  1. In a large bowl, combine warm water, sugar, and yeast. Let sit for 5-10 minutes until frothy.
  2. In another bowl, whisk together bread flour and sea salt. Gradually mix into the yeast mixture until combined.
  3. Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
  4. Place dough in an oiled bowl, cover with plastic wrap, and let rise in a warm spot for about 2 hours or until doubled in size.
  5. Punch down the risen dough and transfer it to an oiled sheet pan, stretching it evenly.
  6. Drizzle olive oil over the dough and top with gruyère cubes, thyme leaves, and Maldon salt flakes.
  7. Cover and let rise again for about 30-45 minutes until puffy.
  8. Preheat oven to 400°F (200°C) and bake for approximately 50 minutes until golden brown.
  9. Allow to cool slightly before slicing and serving.
