  • 12 large tomatillos (about 2 pounds before roasting)
  • 1/2 onion (cut into pieces)
  • 1 jalapeno pepper (quartered)
  • 1 garlic clove
  • 1 tsp kosher salt
  • Optional: 2-inch bunch of cilantro (about 2 tbsp chopped)

Instructions

  1. Preheat your oven to 425 degrees Fahrenheit.
  2. Remove husks from tomatillos and wash them thoroughly. Cut the onion into quarters and the jalapeno into quarters.
  3. Arrange tomatillos, onion pieces, and jalapeno on a cookie sheet. Roast for 20 to 30 minutes until soft and slightly charred.
  4. Allow the vegetables to cool for about 10 minutes. Transfer them to a blender along with garlic and salt; blend until smooth.
  5. Taste the sauce and adjust seasoning if needed.
  6. Store in an airtight container in the refrigerator for up to five days or freeze for up to two months.
