- 450g ground chicken
- 60g grated Parmesan cheese
- 60g breadcrumbs
- 15g fresh parsley, finely chopped
- 3 garlic cloves, minced
- 1 large egg, beaten
- 1 teaspoon dried oregano
- 0.5 teaspoon fine sea salt
- 0.25 teaspoon freshly ground black pepper
- 60ml whole milk
- 2 tablespoons extra virgin olive oil
- 25g grated mozzarella cheese (optional)
- Preheat your oven to 190°C (375°F) and line a baking sheet with parchment paper.
- In a large bowl, mix together ground chicken, Parmesan cheese, breadcrumbs, parsley, garlic, beaten egg, oregano, salt, and pepper until combined.
- Stir in the whole milk to ensure the mixture is moist.
- Divide the mixture into four portions and shape them into mini loaves on the prepared baking sheet.
- Drizzle each loaf with olive oil and top with mozzarella if desired.
- Bake for 25–30 minutes until golden brown and cooked through at an internal temperature of 74°C (165°F).
- Let them rest for five minutes before serving.
