  • 450g ground chicken
  • 60g grated Parmesan cheese
  • 60g breadcrumbs
  • 15g fresh parsley, finely chopped
  • 3 garlic cloves, minced
  • 1 large egg, beaten
  • 1 teaspoon dried oregano
  • 0.5 teaspoon fine sea salt
  • 0.25 teaspoon freshly ground black pepper
  • 60ml whole milk
  • 2 tablespoons extra virgin olive oil
  • 25g grated mozzarella cheese (optional)

Instructions

  1. Preheat your oven to 190°C (375°F) and line a baking sheet with parchment paper.
  2. In a large bowl, mix together ground chicken, Parmesan cheese, breadcrumbs, parsley, garlic, beaten egg, oregano, salt, and pepper until combined.
  3. Stir in the whole milk to ensure the mixture is moist.
  4. Divide the mixture into four portions and shape them into mini loaves on the prepared baking sheet.
  5. Drizzle each loaf with olive oil and top with mozzarella if desired.
  6. Bake for 25–30 minutes until golden brown and cooked through at an internal temperature of 74°C (165°F).
  7. Let them rest for five minutes before serving.
