  • 1.2kg Sweet Potatoes
  • 6 tbsp Unsalted Butter, melted
  • 3 large cloves Garlic, finely grated
  • 1 tbsp Fresh Rosemary, finely diced
  • 1 tsp Salt
  • 1/2 tsp Black Pepper
  • 45g Parmesan

Instructions

  1. Preheat your oven to 180C/350F.
  2. Peel sweet potatoes and slice them into thin rounds, about 3mm thick.
  3. In a large bowl, mix melted butter with garlic, rosemary, salt, and pepper. Coat the sweet potato slices in this mixture.
  4. Layer the slices in a greased muffin tray, stacking them high and brushing with extra butter.
  5. Cover with foil and bake for 35 minutes; then remove foil and bake for an additional 15 minutes at 200C/400F until charred and soft.
  6. Carefully scoop out each stack and drizzle with any leftover butter before serving.
