  • 1 jalapeno pepper (diced)
  • 1 red bell pepper (diced)
  • 3 1/2 cups vegetable broth
  • 1 cup corn
  • 15 ounces tomato sauce
  • 3/4 cup salsa
  • 15 ounces black beans (drained & rinsed)
  • 15 ounces red beans (drained & rinsed)
  • 3/4 cup dried red lentils
  • 1/2 cup light cream cheese

Instructions

  1. Prep your veggies: Dice the onion, jalapeno, and red bell pepper.
  2. Rinse your beans and lentils under cold water.
  3. Combine all ingredients in a slow cooker: Add vegetables, vegetable broth, corn, tomato sauce, salsa, lentils, black beans, red beans, spices, and cream cheese.
  4. Cover and cook: Set on low for about 6 hours or high for about 3 hours.
