  • 1 small onion, diced
  • 1/2 bell pepper, diced
  • 2 cups fresh baby spinach, chopped
  • 1 1/2 cups cottage cheese
  • 4 large eggs
  • 1 cup shredded cheddar cheese (or half cheddar, half mozzarella)
  • 1/2 cup milk
  • 1/2 teaspoon garlic powder
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a skillet, heat olive oil over medium heat and sauté diced onion and bell pepper until soft.
  3. Add chopped spinach and cook until wilted; season with garlic powder, salt, and pepper.
  4. In a large bowl, whisk together eggs, milk, cottage cheese, Italian seasoning, salt, and pepper.
  5. Fold in sautéed vegetables and shredded cheese until combined.
  6. Grease a 9-inch pie dish and pour the mixture in evenly.
  7. Bake for 40–45 minutes until golden on top and set in the center.
  8. Allow cooling slightly before slicing and serve warm or at room temperature.
