  • 4 chicken thighs (bone-in, skin-on)
  • 1 tablespoon vegetable oil
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon minced ginger
  • 4 cloves minced garlic
  • 2 cups chicken broth
  • 1 tablespoon sesame oil
  • 1 teaspoon cornstarch (optional, for thickening)
  • Salt and pepper, to taste
  • 2 cups jasmine rice
  • 4 cups water
  • Chopped green onions for garnish
  • Fresh cilantro for garnish

Instructions

  1. Pat chicken thighs dry and season with salt and pepper.
  2. In a large pot, heat vegetable oil over medium-high heat. Sear chicken skin-side down for 5-7 minutes until golden brown.
  3. Flip the chicken, add soy sauce, brown sugar, garlic, and ginger; stir gently.
  4. Pour in chicken broth, ensuring the chicken is submerged. Bring to a boil, then reduce heat and simmer for about 20 minutes.
  5. Cook jasmine rice according to package instructions while the chicken simmers.
  6. If desired, thicken the broth with cornstarch slurry towards the end of cooking.
  7. Serve sliced chicken over rice, ladling aromatic broth on top. Garnish with green onions and cilantro.
