  • 1.5 tsp baking powder
  • 1.5 tsp baking soda
  • 1 cup granulated sugar
  • 2/3 cup light brown sugar
  • 1 tsp salt
  • 3 large eggs, ideally room temp
  • ⅔ cup vegetable oil
  • 1/3 cup buttermilk – mix 1/3 cup whole milk + 1 tsp vinegar
  • 1 cup sour cream, ideally room temp
  • 3/4 cup cocoa powder, Dutch Processed preferred
  • 2 tsp instant coffee
  • 3/4 cup boiling water
  • 300g dark chocolate
  • 3 tbsp corn syrup
  • 8 oz cream cheese, room temperature
  • 1/3 cup cocoa powder
  • 1 cup powdered sugar
  • 1/4 tsp salt
  • 1 1/4 cup heavy cream, chilled

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large bowl, whisk together flour, baking powder, baking soda, granulated sugar, light brown sugar, cocoa powder, and salt.
  3. In another bowl, combine eggs, vegetable oil, buttermilk mixture, sour cream, and instant coffee until smooth.
  4. Gradually add wet ingredients to dry ingredients while mixing gently. Pour in boiling water and mix until combined.
  5. Divide the batter into prepared pans and bake for about 30 minutes or until a toothpick comes out clean.
  6. For the frosting, melt dark chocolate with corn syrup over low heat. Once cooled slightly, beat with room temperature cream cheese until smooth. Gradually mix in powdered sugar and cocoa powder before folding in chilled heavy cream until fluffy.
  7. Once cakes are cooled completely, frost between layers and cover top and sides generously with frosting.
