  • 5 cups cubed butternut squash
  • 1/2 cup olive oil
  • 1 block (8 oz) feta cheese
  • 1 lb pasta (such as rotini or ditalini)
  • 10 fresh sage leaves, minced
  • 3 cloves garlic, minced
  • hot honey (or regular honey)
  • fresh cracked black pepper

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. In a large bowl, combine cubed butternut squash with olive oil, salt, and black pepper. Place in a baking dish and add the feta cheese in the center. Drizzle with more olive oil and sprinkle with red pepper flakes if desired. Bake for about 30 minutes.
  3. Increase oven temperature to 450°F (230°C) and bake for an additional 5-10 minutes until feta is golden brown.
  4. Cook pasta according to package instructions until al dente, reserving two cups of pasta water before draining.
  5. Remove baking dish from the oven, stir in garlic, sage, hot honey, cooked pasta, and one cup of reserved pasta water until well combined. Adjust consistency with more reserved water as needed.
