  • 3 cups butternut squash, peeled and cubed
  • 340 g Brussels sprouts, halved
  • 225 g bow tie pasta
  • 340 g cooked chicken sausage or turkey sausage
  • 5 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 200°C. Toss cubed butternut squash with olive oil, salt, and pepper on a parchment-lined baking sheet and roast until tender.
  2. Halve Brussels sprouts and toss with olive oil, salt, and pepper; roast until golden brown.
  3. Cook bow tie pasta in salted water until al dente; reserve some pasta water before draining.
  4. In a skillet, brown the chicken or turkey sausage. Remove and set aside.
  5. In the same skillet, sauté minced garlic in butter until fragrant. Add drained pasta along with seasoning and reserved pasta water to create a sauce.
  6. Mix in roasted vegetables and sausage; combine well and adjust seasoning to taste.
