  • 2 pounds beef chuck, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 cup parsnips, diced
  • 1 cup celery, diced
  • 1 tablespoon tomato paste
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear beef cubes until browned on all sides.
  2. Add onion and garlic; sauté until the onion is translucent.
  3. Stir in tomato paste; cook for one minute.
  4. Pour in a splash of beef broth and scrape the bottom of the pot.
  5. Return the beef to the pot; add remaining broth, carrots, potatoes, parsnips, and celery.
  6. Season with thyme, rosemary, bay leaf, salt, and pepper.
  7. Bring to a boil; reduce heat to low and cover. Simmer for about two hours or until beef is tender.
  8. Adjust seasoning as necessary before serving hot, garnished with fresh parsley.
