  • 8 cups peeled and diced apples (about 6 Granny Smith apples)
  • 2 cups apple juice (preferably organic)
  • Zest and juice of 1 small lemon
  • 1 tablespoon apple cider vinegar
  • Pinch of salt
  • 3 tablespoons pectin
  • 1.5 teaspoons ground cinnamon
  • 0.5 teaspoon ground ginger
  • 0.5 teaspoon ground cardamom
  • 0.25 teaspoon ground cloves
  • 0.25 teaspoon ground nutmeg
  • 3 cups white granulated sugar

Instructions

  1. In a large pot, combine diced apples, apple juice, lemon zest and juice, apple cider vinegar, and a pinch of salt. Bring to medium-high heat until boiling.
  2. Reduce heat to low and simmer for about 10-12 minutes until the apples are tender.
  3. Stir in spices and sprinkle pectin gradually while stirring to prevent clumping.
  4. Return to high heat until it reaches a rolling boil, then add sugar all at once, stirring continuously for one minute.
  5. Remove from heat; spoon the jam into jars for refrigeration or follow water bath canning instructions for longer storage.
